Yield: 5-6 People
Prep Time: 10 Minutes
Cook Time: 3 and 1/2 Hours

  • 1 Whole Chicken (6-7lbs)
  • 2 Tablespoons Butter
  • 2 Cups Chicken Stock or Chicken
  • Broth
  • 1 Tablespoon Brozzian's Sicilian Seasoning
  • 1 Tablespoon Brozzian's All Purpose Seasoning
  1. Pre-heat Oven to 300 degrees Fahrenheit.
  2. Wash whole chicken under cold water and place it in larger stockpot.
  3. Add the 2 Cups chicken stock or broth to bottom of the pot, so the chicken is sitting in the liquid.
  4. Take the 2 Tablespoons of butter and cut it into little cubes.
  5. Gingerly slide the butter cubes under the skin of the chicken in different sections. (This will help make the skin crispy and keep the chicken moist).
  6. Now, take the 1 Tablespoon of each Sicilian and All Purpose Seasoning and evenly sprinkle over the top of the chicken, covering as much of the chicken as possible.
  7. Next, cover it with aluminum foil and place it in the pre-heated oven for 3 and 1/2 hours.
  8. After the 3 and 1/2 Hours is up, take the chicken out and check the internal temperature with a thermometer (probe) to make sure your chicken is cooked. The probe should read 165 degrees Fahrenheit or higher. If not, place the chicken back in the oven for additional cooking time.
  9. Let the chicken sit for 5 minutes after taking it out of the oven.
  10. Take the chicken out of the pot and slice off the bone or pull off the bone. Enjoy.
